Preheat smoker to 200F
Place bacon in a ziploc bag, or other airtight container and marinate overnight in the honey garlic marinade.
When ready, remove bacon from marinade and remove any excess liquid. Twist bacon about 8-10 times to get the bacon twists nice and tight. Lay the bacon twists on a wire cooking rack, and gently press each end of the bacon into the grid of the rack. This will help keep them from unwinding while cooking.
Place in preheated smoker, and let cook for 4 hours. Check in on them periodically to make sure they aren't burning. You want a dark amber color of the bacon, without turning black. Note the bacon will not end up crispy, we want a texture similar to store bought beef jerky.
Once the bacon is done, brush on hot honey that has been warmed in smoker, and sprinkle black pepper on top as garnish. Cut into desired sizes and serve.
