Preheat oven or smoker to 400F
Slice whole dill pickles into rounds about 3/4"
Slice bacon strips into lengths just long enough to go all the way around the pickle, with a little overlap
Wrap each pickle slice with a thick-cut bacon strip and secure with a toothpick, forming a “shot cup” shape.
Spoon cooked ground beef into each bacon-wrapped pickle slice.
Sprinkle each shot cup with your favorite BBQ rub and top generously with shredded cheddar cheese.
Smoke the bacon pickle shots for about 45 minutes, or until the bacon is crispy and the cheese on top is melted and slightly crispy (cooking time may vary).
When bacon is crisp and an amber brown color. Add a final pinch of shredded cheddar on top of each shot cup and let it melt for about 5 minutes.
Enjoy warm with a side of ranch dip.
