Preheat oven or smoker to 400F
Slice Jalapeños in half long ways, don't cut off top or bottom
Remove core and seeds from each jalapeno half
Combine eggs, salt, pepper, and milk and whisk well to incorporate
Spoon eggs into jalapeno canoe to about 3/4 of the way full
Add a pinch of shredded cheese into the eggs
Holding level, wrap each egg and cheese filled pepper in a slice of bacon. Make sure the ends of the bacon are on the bottom.
Place on wire rack and cover liberally in your favorite BBQ seasoning
Cook in smoker or oven for 30-35 minutes
