Loaded Fries Recipe on Griddle

Preheat griddle to medium heat, shooting for 375F - 400F cook bacon until it's crisp to your liking, and set aside to chop.
Add frozen french fries directly to griddle in bacon grease. I like to spread the grease around the griddle so that it's not pooled up. If it is, discard until it's not pooled. Cook fries for about 15-20 minutes in total, flip them often about every 3-5 minutes. Season with Honey Sriracha or your favorite BBQ seasoning while cooking.
When fries are crisp, turn off the burners and move them together on the griddle, spread cheese and bacon over the top of the fries liberally. Close lid, or add cover to melt cheese. Serve hot
