Preheat oven to 350F
Slice biscuits in half to butterfly them evenly. On the bottom half, spread peanut butter taking care not to breakthrough the dough. Add a dollop of jelly on top.
Carefully stretch the top of the biscuit over the peanut butter and jelly. Place it evenly with the bottom piece to cover and using a fork, crimp the edges all the way around to seal.
Place sugar and cinnamon in a bowl or plate and mix well to combine, roll the stuffed pb&j to coat both sides
Lay on baking sheet and bake for 15-17 minutes until the dough is cooked through.
Let rest for 5-10 minutes to allow the filling to cool, serve warm
