Preheat smoker to 300F
Remove steak from fridge and season liberally with salt, pepper, onion and garlic powder, or your favorite steak seasoning. Let it sit out to warm up and absorb the seasoning
Preheat oven to 425F or as directed by instructions on french fry bag
Place fries on a baking sheet and season with salt & pepper if they are unseasoned. I like some Garlic Powder too. Place in heated oven
In a hot skillet, add butter or ghee, and sear steak as hot as possible for about 1 minute per side, when done, remove and place in smoker. Allow to cook until about 125F internal, then remove to rest for about 10 minutes
In the same skillet, add a bit more oil if needed and sauté the sliced onions on low heat with the seasonings until they’re soft and caramelized. Once they are soft, add balsamic vinegar, mix well, and let them simmer for 5 minutes to absorb the flavor
When the fries about 75% (about 20 minutes) of the way done cooking, remove and add shredded cheddar cheese and jalapeno. Place back in oven for 5 minutes.
Slice steak to your desired preference.
Finish assembling by adding caramelized onions on top of fries with sliced steak on top. Serve immediately
