Preheat your oven or smoker to 225F
Prepare bacon by slicing it vertically to cut in half
Slice your jalapeños and cream cheese
Stack jalapeno slice and cream cheese pat on top of Ritz cracker
Wrap in the half-slice of bacon and make sure the seam for the bacon is on bottom
Season liberally with Jack of all Rubs seasoning
Smoke for 15 minutes at 225F
Increase temperature to 400F for 25-30 minutes until bacon is cooked
Allow to rest for 5-10 minutes before serving.
