Preheat your oven to 375°F. Grease a muffin tin generously with cooking spray.
Take your chocolate chip cookie dough and divide it evenly into the greased muffin tin, pressing the dough into the bottom and up the sides to form cups.
Place the muffin tin into the preheated oven and bake the cookie cups for 6-7 minutes, just until the edges start to set.
Remove the tin from the oven and place a large marshmallow into the center of each cookie cup.
Return the tin to the oven and bake for another 7-10 minutes, or until the marshmallows are golden brown and gooey, and the edges of the cookie cups are nicely browned.
Once baked, allow the cookie cups to cool in the tin for 30-40 minutes. This will help the cookie cups release easily from the tin.
Once cooled, gently remove the cookie cups from the muffin tin. Sprinkle crushed Graham crackers over the tops of the marshmallows, and drizzle generously with chocolate sauce.
